BAKED CHICKEN

Introduction :

Another good chicken alternative to fish for the monsoons . . .

Ingredients :

21 kg chicken,
1 ½ lemon,
3 soup cubes
and 1 tbsp butter.

Preparation:

Clean the chicken and remove its giblets. Fix 1 cube and half a sliced lemon towards the inside of the bird’s neck. Fix another cube and half a sliced lemon in the centre inside and the third cube and half lemon slice, inside at the end. Tie the legs with a strong white thread. Tie the wings too. Rub the outside of the bird with butter and place it in a baking pan (preferably breast down) wrapped in foil if available. Bake in a pre-heated oven at Gas mk.5 for 45 minutes or so. The chicken should be well browned.

Serve with baked potatoes and salad.
