Vindaloo is a dish that was introduced to India by the Portuguese. It took root in Goa. It is mor generally cooked with pork.
250gm diced best chuck steak
5 to 6 dried red chillies
21/2tps brown vinegar
1Tbsp chilli paste
1 chopped onion
1 diced potato
2tsp coriander powder
11/2tsp brown sugar
1/2tsp garam masala
1tsp mustard seeds
Soak dried red chillies in brown vinegar and make a paste in a mortar and pestle.
Marinate the meat in 1 tablespoon of the chillie paste along with the garlic, ginger, coriander powder, brown sugar, turmeric and garam masala.
Leave in marinade for one hour.
Brown the meat, add the chopped potato and a little water if necessary. Bring to the boil, reduce and cook over a low heat until tender.
Cook the chopped onion in hot oil adding the teaspoon of mustard seeds and fry with the onion till they pop!
Serve sprinkled with the chopped fresh coriander and fried onion, along with steamed rice.
