Bharwa Bhindi Recipe

500 gms bhindi/okra/lady finger
2 tsps salt
1 tsp red chilli powder
1/2 tsp roasted jeera powder
1/2 tsp garam masala
1/2 tsp amchoor
1/2 tsp turmeric
1 and 1/2 tsp coriander powder
1 and 1/2 tsp fennel seeds powder
1 tsp coriander seeds
2 medium sized diced onions


1) wash the bhindi’s and dry them over a kitchen towel for 20 mins
2) make sure there is no moisture over bhindi’s and they are dry
3) slit open the bhindi’s vertically with a knife
4) mix all the above masala’s EXCEPT coriander seeds/onions and oil
5) stuff the bhindi’s with this mixture of spices around 1/8 tsp of filling.
6) take a kadai/wok
7) add 3 table spoons of vegetable oil with the flame at medium-high
when the oil is hot enough, add the coriander seeds followed by onions
9) any masala mixture while filling the bhindis’ if you saved you can add now
10) after you saute’ for around 5 mins , you can now add the bhindi’s
11) cook the bhindi’s for around 10 mins at a low flame
12) cover the bhindi’s with a lid now and cook for around 10-15 mins at a low flame
13) while the lid is on, check 2-3 times in between if the bhindi’s are soft and tender
14) optionally you may garnish it with anardana
15) serve hot with chapati’s / phulka’s , enjoy !


Tip : make sure the bhindi’s are dried well after washing and otherwise while cooking they would stick to each other.
