Use 500g – potatoes (peeled and cubed)
Use 5 – green chillies (finely chopped)
Use 1 tsp – mustard seeds
Use 2 – onions (chopped)
Use 250 gm – gram flour
Use ¼ tsp – each of chilli and turmeric powders
Use ¼ tsp -sodium bicarbonate
Use 10 – green chilies
Use 1 inch – ginger root (peeled)
Use 10 – garlic cloves (peeled)
Use 4 tbsp – coconut (grated)
Use 2 tbsp – coriander leaves (chopped)
Use ½ tsp – cumin seeds
Use oil for deep frying
Boil the potato cubes. Do not over boil.
Grind the above mentioned ingredients to a paste.
Mix boiled potatoes cubes and spice paste.
Add the remaining green chillies and salt to taste.
Heat 1 tbsp. Oil, fry mustard seeds till they start crackling, add onions and fry till tender.
Stir in potato mixture, mix well and cool. Take small portions, shape into balls and keep aside. Make a thick batter of gram flour and a little water. Add salt to taste, red chilli and turmeric powders and sodium bicarbonate.
Take a deep frying pan, pour oil and heat. Take 2 tbsp of oil and stir into the batter and deep fry as many as the pan can hold.
Should any batter remain, coat large green chilies or potatoes slices with batter and deep fry.
