Chili Paneer Recipe

For The Marinade

500 gms paneer / indian cottage cheese
1 tsp ginger garlic paste
1 tsp salt
1/2 tsp white pepper powder
1 tbl spoon all purpose flour / maida
1/4 tsp dark soy sauce
1 tsp corn starch
oil for deep frying

For The Sauce

2 tbl spoons of sesame oil
2 tbl spoons chopped ginger garlic (garlic 70% + ginger 30%)
1/2 cup bulb of spring onions
3 chopped green chili’s
2 cups of bell peppers (red, yellow and green)
1 tsp salt
1/2 tsp black pepper
1 tbl spoon white vinegar
1 tsp soy sauce
2 tbl spoons of hot chilli sauce
2 tbl spoons corn starch water
chopped green stalks of spring onions for garnish

For The Marinade

1) in a bowl take the paneer cubes.
2) add all the ingredients mentioned above except oil which will be used for deep frying later.
3) mix the paneer cubes with all the ingredients and keep them aside.
4) in a kadhai/wok add vegetable oil to deep fry the paneer cubes.

For The Sauce

1) to a wok add 2 tbl spoons of sesame oil, and when the oil is hot enough add finely chopped ginger and garlic, and saute` while cooking at a high flame.
2) when the ginger garlic is half cooked add the bulbs of spring onions and continue to saute`
3) no sooner the onions are half cooked add 3 chopped green chili’s and cook for 2 mins.
4) add the yellow, red and green bell peppers which have been diced into small cubes and cook them for around 2-3 minutes.
5) add salt, white/black pepper and toss it along with the other veggies already in the wok.
6) add white vinegar followed by soy sauce, also add in hot chili sauce and mix all the sauces with the dry ingredients in the wok.
7) now add the paneer cubes that you had fried early on, and toss them along with all the veggies and sauces.
towards the end, add 1/2 tsp corn starch which has been mixed with 2 tbl spoons of water.
9) add the green stalks of spring onions finely chopped to garnish, and these when cooked for a long time release water, so make sure the moment you add them, you put off the flame.
10) serve chili paneer, smoking hot to your guests, enjoy
