Fresh Apple Cake
Use 185 ml. Vegetable oil
Use 200 gms. Sugar
Use 2 eggs
Use 140 gms flour
Use 1 tsp. Baking powder
Use ½ tsp cinnnamon powder
Use ½ tsp. Salt
Use 140 gms. Peeled and chopped apples
Use 2 tsps. Chopped nuts (optional)
Use 1 tsp vanilla essence
Blend Oil and sugar together. Add eggs one at a time, beating well after each addition. Sift together dry ingredients and add to egg mixture.
Stir in chopped apples, nuts and vanilla. Pour into a greased pan.
Bake a pre-heated oven at Gas Mk. 4 for about an hour until nice and brown. Check piercing a knife to see if it comes out clean
