How To Make Vegetable Escalibada


You will need:

* 1 medium size courgette
* 1 medium size aubergine
* 1 onion
* 4 Italian style green peppers
* 2 tomatoes
* 8 mushrooms
* Olive oil to taste
* salt to taste
* 1 chopping board
* 1 cooking tray
* 1 aluminium paper
* 1 kitchen paper
* 1 large knife
* 1 wooden spatula


Step 1:

Preheat the oven

Set the temperature to 200ºC.

Step 2:

Prepare the vegetables

Slice the courgette, aubergine, onion, green peppers and tomatoes in 1cm thick pieces and set aside.

Step 3:

Place the vegetables on baking tray

Spread some olive oil onto the aluminium foil on the baking tray and arrange the sliced vegetables on top, distributing them evenly
The vegetables can be either cooked in the oven, as we are demonstrating, or on a barbecue. On a barbecue the cooking time will be shorter..

Step 4:

Roast the vegetables

Place the tray in the oven and cook for 15 minutes. Then sprinkle the vegetables with olive oil and cook for a further 25 minutes.
When fully cooked, remove them from the oven.

It can be served as a main course, or as a side dish.
