The ancient Chinese, according to Charles Lamb, discovered the art of cooking when an accidental fire burnt down a hut and cooked a trespassing piglet to a turn. After that, mysterious fires kept burning down huts at regular intervals, always followed by much feasting. As this was an expensive - rather inconvenient - procedure, the mandarins pooled their wits together and Lo!(or Lee!), the art of cooking was born.
A rare breed
Over the years, Chinese food has become something of a passion with restaurant goers, influencing even non-chinese outlets to introduce Chinese cuisine in their menus. Authentic Chinese restaura nts are so rare throughout that they can be counted on fingers of one hand! In Margao, the burgeoning commercial capital of Goa, there was none at all. Until, in 1985, along came...Gaylin
Face-lift
For over a decade now
Gaylin has held its place as one of the top
restaurants in the state. Not content to rest on its laurels, it was recently
given a face-lift. Now clients can dine in a setting as oriental as the food.
Chinese lanterns shed light on fire-spitting dragons and other Chinese motifs on
the walls; tinkling oriental music intersperses with modern jazz and rock - even
the menu card is spectacular. 
Where special is the rule(not the
exception)
The fare, of course, is exclusively Chinese. Do not ask for the "Gaylin
Special": you will be told that every dish on their menu is
special.
Fully air conditioned, Gaylin has an
up and down. And is open daily from 11 a.m. to 3 p.m. and 7 p.m. to 11
p.m.
