RICE CROQUETTES

RICE CROQUETTES

Introduction :

From: Best of Goan Cooking by Joyce Fernandes

 

Ingredients :

2 cups boiled rice
3 tbsps. milk
2 tbsps. butter
2 eggs (beaten)
1 tbsp chopped coriander leaves
2 green chillies (chopped)
1/2 tsp. chilli powder
2 tbsps chopped onion
salt to taste
breadcrumbs
and
oil for deep frying.

Preparation:

Mix all the ingredients except the last two. Cook on very low flame till almost dry, stirring continuously.
Cool, shape into 2 inch croquettes, roll in breadcrumbs and deep fry in hot oil.
