Veg Manchurian Recipe

There are two versions of Vegetable Manchurian, wet and dry. Made with generous amount of garlic and ginger and flavored with soy sauce and vinegar, the wet Vegetable Manchurian (with gravy) complements steamed white rice and is best when drizzled on a serving of steaming hot rice, fried rice or noodles. The dry Vegetable Manchurian is best served as an appetizer.

Ingredients :

For The Manchurian Balls

3 cups grated cabbage
2 cups grated carrot
1 cup grated capsicum
1 cup green stalks of spring onion
1/4 tsp chopped garlic
1/4 tsp chopped ginger
1/2 tsp white pepper powder
1 tsp salt
1/4 tsp ajinomoto / msg (optional)
1/4 tsp soy sauce
2 tbl spoons of all purpose flour
2 tbl spoons of corn flour
350 ml of veg. oil for deep frying

For The Manchurian Sauce

2 tbl spoons of sesame oil
1 and 1/2 tsp chopped ginger
2 tsp chopped garlic
1 cup bulbs of spring onion
1/4 tsp msg / ajinomoto
1 tsp salt
1 tsp white pepper powder
2 tbl spoons soy sauce
1 tbl spoon tomato ketchup/sauce
1 tbl spoon of hot chili sauce
1-2 cups water (wet sauce consistency)
1 tsp lemon grass sauce (optional)
1 cup chopped chives
1 cup chopped stalks of green onions
1 cup water mixed along with 2 tsp corn flour
1 tbl spoon of vinegar

Instructions :

For the Manchurian Balls

1) In a bowl add all the ingredients and mix well as you knead the dough, if your trying this recipe for the very first time, avoid using soy sauce and spring onion stalks at this time, and use the rest of the ingredients coz, soy sauce and spring onions would release a lot of moisture and your manchurian balls would break when you make them.
2) make balls out of this vegetable dough that you prepared and coat it with a single coating of corn flour so that the balls don’t break while deep frying them in hot oil.
3) heat a wok and add enough oil to it to deep fry your balls, for around 2-3 mins, deep fry them and strain the oil and store these balls on a paper napkin.

For The Manchurian Sauce

1) in a wok add sesame oil, keep the flame high throughout this recipe.
2) add ginger and garlic and saute’ by add bulb of spring onions.
3) drop in a few spices like white pepper, salt and optionally msg.
4) toss it for around a min, and add soy sauce.
5) add tomato sauce and hot chilli sauce including lemon grass sauce.
6) let these sauces be aborbed in the veggies for around 45 secs.
7) add water according to the level of consistency you need for your sauce.  add chopped chives and chopped green stalks of spring onions.
9) cook it for a min or two and let the veggies cook for a while in the sauce.
10) add corn flour mixed in water by pouring it gently while you stir continuously so no lumps are formed and your sauce now thickens up in just 15-30 seconds.
11) add vinegar, remember to add vinegar always towards the end of any recipe coz, it’s sour nature dosen’t allow sauces/gravies to cook properly.
12) add the manchurian balls and let the sauce indulge with them and overlap their surface by gluing to them, let it cook for around a min or two.
13) serve hot as a side dish with a main dish like fried rice / noodles, enjoy !
